- 1 cup tightly packed fresh basil leaves
- 30g Pinenuts
- 40g Parmesan cheese, grated
- 2 cloves garlic
- 120ml Virgin olive oil
- 1tbs lemon juice
- Sea Salt to taste
To make your own fresh basil pesto you will obviously need these main ingredients: fresh basil, extra virgin oil and pinenuts. You can add grated Parmesan if you are going to use it right away. If you plan to freeze it for later use – which is a great idea, you should leave the Parmesan out. It is a good idea to add 1 tbs of lemon juice which will keep your pesto color bright green and stop it from turning dark. To add a little bit of extra flavor, you should toast pinenuts on the pan or in the oven. To achieve fantastic taste, don’t forget to add garlic and a little bit of salt. Also, it is very important to clean your fresh basil and dry it well before you blend it.
1. Blend basil, pinenuts and garlic in a food processor
2. Slowly add extra virgin olive oil, grated Parmesan and lemon juice.
3. Blend it until nice and creamy.
4. Add salt to taste
You can use this Basil Pesto for a Chicken Pesto Pasta or you can serve it on a crunchy toasted bread with a little bit of Parmesan cheese on top.
To freeze your basil pesto in small portions, you can use an ice tray then place it in separate bags to store it in the freezer for a long time. Just remember, if you intend to freeze it – do not add Parmesan, it doesn’t freeze well with cheese.
